Celiac disease (visceral disease) is an inflammatory enteropathy of the intestine of the small intestine with an immunological basis, caused by the consumption of gluten, occurring in genetically predisposed individuals. Its occurrence is influenced by genetic, environmental, infectious factors, immunological and metabolic factors. The occurrence of clinical symptoms of celiac disease (both from the gastrointestinal tract and from the other organs) should be a signal to initiate diagnosis of direction of celiac disease and thus to perform serological tests for the presence of antibodies typical of celiac disease. Given the differences in sensitivity and specificity of tests for individual markers, it is recommended to different determinations of antibodies, for example, against gliadin and against endomysium. Serological testing is the initial step in the diagnosis of celiac disease. Determination of antibodies against gliadin is useful also in monitoring a gluten-free diet; antibody levels correlates with gluten consumption. These anti-gliadin antibodies are specific for celiac disease and their presence in the blood significantly increases the likelihood of detecting the disease, however, their absence does not rule out celiac disease.
